***This is fast and easy. It's perfect for Super-Bowl-type occasions or want-a-delicious-sub-type occasions. :) The recipe comes from Simple and Delicious magazine.***

1 1/3 cups pizza/spaghetti sauce
4 submarine/hoagie buns, split
1-1/3 cups shredded part-skim mozzarella cheese
20 slices pepperoni
1 pkg (12 oz) frozen fully cooked meatballs, thawed
Italian seasoning to taste
Spread 1/3 cup pizza sauce on the bottom of each bun. Top each with 1/3 cup cheese, five slices of pepperoni and three meatballs; sprinkle with Italian seasoning. Replace tops.
Wrap each sandwich in foil. Bake at 400 for 10-12 minutes or until heated through.
I just eyeball the amounts. My dad altered the recipe by combining the spaghetti sauce and the meatballs in a microwave-safe casserole and adding peppers, onions, and a little brown sugar and then cooking/heating them all together. He places sliced cheese (provolone was excellent!) on the bun followed by pepperoni followed by the meatball sauce mixture. He heats the sandwich the same way as the recipe calls for. I've decided this method tastes better!
P.S. We've discovered that too long in the oven ruins the sandwiches. Stick with 10-12 minutes. :) The leftovers aren't too bad either.
