Autumn Oatmeal Cookies

In the mood for sweater weather, changing leaves, and football games? These yummy oatmeal cookies taste and smell just like Autumn!!

Ingredients:
1 cup butter, softened
3/4 cup packed brown sugar
1/2 cup sugar
2 eggs
1 tsp vanilla
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon pumpkin pie spice
2-3/4 cups quick-cooking oats
1-1/2 cups chocolate-covered raisins (regular chocolate chips work well too)

Directions:
In a large bowl, cream butter and sugars until light and fluffy. Beat in eggs and vanilla. Combine the flour, baking soda and pumpkin pie spice; gradually add to creamed mixture and mix well. Stir in oats and raisins. (I had to stir in the chocolate-covered raisins by hand because the mixer was ripping them apart.)
Drop by tablespoonfuls 2 in. apart onto greased baking sheets. Flatten slightly.
Bake at 350° for 10-12 minutes or until golden brown. Cool for 5 minutes before removing to wire racks. Store in an airtight container.
Yield: 3 dozen (makes more)

Orange Chip Cookies

2 ¼ cups all-purpose flour
¾ tsp baking soda
½ tsp salt
1 cup (2 sticks) unsalted butter, softened
½ cup granulated sugar
½ cup firmly packed light brown sugar
1 large egg, room temperature
1 cup White Chocolate Chips
1 Tlbs grated orange zest

Preheat oven to 350. Sift flour, baking soda and salt into small bowl. Beat butter, granulated and brown sugars in large mixer bowl until smooth, about 3 minutes. Add egg; mix well. Gradually add flour mixture. Stir in morsels and orange zest. Drop by rounded teaspoonfuls onto ungreased baking sheets. Bake 10-12 minutes or until light golden brown. Cool on baking sheets for 2 minutes; removed to wire racks to cool completely.

Peanut butter fudge puddles


1/2 cup butter
1/2 cup sugar
1/2 cup brown sugar
1 egg
1 1/4 cup flour
1/2 cup peanut butter
1 tsp vanilla
3/4 tsp baking soda
1/2 tsp salt
Fudge filling:
1 cup milk chocolate chips
1 cup semi sweet chocolate chips
1 can sweet condensed milk
1 tsp vanilla
In mixing bowl cream butter, peanut butter, and sugars, add egg and vanilla. Mix dry ingredients then add to wet. Chill for 1 hour. Shape into small balls. Put in lightly greased mini muffin tin. Bake 325 for 14 minutes. Make well in cookies. Cool cookies in pan for 5 minutes. Carefully take out of pan.
Fudge: Melt chocolate chips in microwave. Stir in milk and vanilla. Warm thoroughly. Fill each cookie with fudge.
**We don't like a lot of fudge in these so I tripled the cookie recipe and used just one batch of fudge.

Mrs. Field's Cookie Recipe

(Reportedly the authentic, official recipe)

Cream Together
1 lb. butter (no substitutions)
1 1/2 cups sugar
2 cups dark brown sugar

Add
3 eggs
2 tsp. vanilla
1 1/2 tsp. salt
1 1/2 tsp. baking soda
6 cups flour

Beat 3 to 4 minutes. Batter may be dry.

Additions
Four to 5 cups real chocolate chips (semi-sweet or milk); 2 cups chopped nuts (optional); or 2 cups raisins and 1 1/2 cups oatmeal.

Cover cookie sheet with waxed paper. Scoop dough out with an ice cream scoop. Place 2 inches apart. Change wax paper for every new batch. Bake at 350 degrees for 8 to 11 minutes. Cookies may not look completely done. Makes 4 to 5 dozen. (Recipe will not turn out as well if cut in half.)

Snickerdoodles

1 cup butter shortening
2 eggs
1 1/2 cups sugar
3 cups flour
1 tsp baking soda
2 tsp cream of tartar
1 tsp salt

1. Preheat oven to 350 degrees.
2. Cream shortening, eggs, and sugar.
3. Mix dry ingredients in separate bowl, and add to other mixture.
4. Mix together a few tablespoons of sugar, to a few teaspoons of cinnamon. Roll dough into balls, and roll in cinnamon and sugar mixture.
5. Bake at 350 for 8-10 minutes.

Peanut Butter Oatmeal Cookies

1/2 cup shortening
1/2 cup margarine
1 cup brown sugar
3/4 cup white sugar
1 cup peanut butter
2 eggs
1 1/2 cups flour
2 tsp baking soda
1 tsp salt
1 cup oats
2 cups chocolate chips

1. Preheat oven to 375 degrees.
2. Cream shortening, margarine, and white and brown sugars until smooth. Add peanut butter, and mix well. Add eggs one at a time, mixing well after each.
3. In a separate bowl, combine flour, baking soda and salt. Mix.
4. Add dry mixture to wet mixture, and mix well. Stir in oats. Add chocolate chips, and mix.
5. Bake for 9-11 minutes. Let cookies sit on the cookie sheet for two minutes after you take them out of the oven, before putting them onto a rack.

Chocolate Chip Cookies

I know everyone already has their favorite chocolate chip cookie recipe . . . but these are really good!! My sister had them at my Mom's when we were last there and after I'd eaten like a dozen of them in 10 minutes she says to me "don't worry about the pound of butter that's in the cookies". Thanks Erica!! (No picture today, but I'll work on that.)

1 lb. butter (softened)
1 1/2 cups white sugar
2 cups packed brown sugar
3 eggs
2 tsp vanilla
6 cups flour
1 1/2 tsp baking soda
1 1/2 tsp salt - use exact amount
4 cups chocolate chips - 2 bags

Cream butter. Combine sugars then add to butter. Mix eggs and vanilla in small bowl and add to sugar mixture. Mix dry ingredients then add slowly. Add chocolate chips. Line cookie sheets with wax paper. Cook @ 350 for 8 - 10 minutes. Cool on wax paper. Only let cool for 1 minute on pan.
