Baked Corn in Sour Cream
2 tablespoons butter
2 tablespoons chopped onion
2 tablespoons flour
1/2 teaspoon salt
1 cup sour cream
1 1/2 pounds whole kernel corn, frozen
2 tablespoons finely chopped celery
6 slices bacon, cooked crisp and crumbled
1 tablespoon minced fresh parsley
In large saucepan, melt butter. Stir in onion and saute until transparent. Blend in flour and salt. Gradually stir in sour cream until mixture is smooth. Add corn and celery, heating thoroughly. Stir in bacon and parsley. Pour into greased 2-quart casserole. Bake at 350 degrees for 30 to 45 minutes.

Mrs. Field's Cookie Recipe
(Reportedly the authentic, official recipe)
Cream Together
1 lb. butter (no substitutions)
1 1/2 cups sugar
2 cups dark brown sugar
Add
3 eggs
2 tsp. vanilla
1 1/2 tsp. salt
1 1/2 tsp. baking soda
6 cups flour
Beat 3 to 4 minutes. Batter may be dry.
Additions
Four to 5 cups real chocolate chips (semi-sweet or milk); 2 cups chopped nuts (optional); or 2 cups raisins and 1 1/2 cups oatmeal.
Cover cookie sheet with waxed paper. Scoop dough out with an ice cream scoop. Place 2 inches apart. Change wax paper for every new batch. Bake at 350 degrees for 8 to 11 minutes. Cookies may not look completely done. Makes 4 to 5 dozen. (Recipe will not turn out as well if cut in half.)

Yummy Chili and Cornbread
This is a family favorite at my house and we love to get Wendy's chili because it's cheap, tastes great and is reasonably healthy! Of course, you can use your own chili but this is what we like. We serve the chili over the cornbread. The recipe for the cornbread (my hubby likes to call it corncake because it's sweet and fluffy!) is listed below.
Cornbread:
3 eggs
1 1/2 cups milk
2 1/4 cubes butter, melted
1 cup cornmeal
3/4 tsp baking powder
1 cup sugar
Beat eggs. Add milk and butter. Fold in dry ingredients. Mix well. Pour into greased 9x13 pan. Bake at 350 degrees for 45-50 minutes. (It makes a lot!)

BBQ Chicken Pizza
Ok so this isn't really a set recipe but my husband and I love bbq chicken pizza. So i decided to make it myself last night and it turned out so good!!
Just get your favorite pizza crust (we like Lacys homemade pizza crust so good and easy)
then just spread on your favorite bbq sauce with
diced cooked chicken and slices of red onion
and top with lots of mozzerella and cheddar cheese.
Bake at 450 for about 15 min and you have one yummy pizza!!

Big Fat Chewy Chocolate Chips Cookies
My sister in law gave me this recipe and I love it!! I will not make choco chip cookies any other way!!
2 cups all purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup unsalted butter, melted
1 cup packed brown sugar
1/2 cup white sugar
1 tablespoon vanilla
1 egg
1 egg yolk
2 cups semisweet choco chips
Preheat oven to 325. Grease cookie sheet. Sift together flour, baking soda, salt. In a medium bowl, cream together butter, brown sugar, white sugar until well blended. Beat in the vanilla, egg and egg yolk until light and creamy. Mix in sifted ingredients until just blended. Stir in choco chips with a wooden spoon. Drop cookie dough 1/4 cup at a time onto the prepared cookie sheets. Cookies should be about 3 inches apart. Bake for 15 to 17 minutes until the edges are lightly toasted. Cool on baking sheets for a few minutes before transferring to wire racks to cool completely.

Meatball Pizza Subs
1 1/3 cups pizza/spaghetti sauce
4 submarine/hoagie buns, split
1-1/3 cups shredded part-skim mozzarella cheese
20 slices pepperoni
1 pkg (12 oz) frozen fully cooked meatballs, thawed
Italian seasoning to taste
Spread 1/3 cup pizza sauce on the bottom of each bun. Top each with 1/3 cup cheese, five slices of pepperoni and three meatballs; sprinkle with Italian seasoning. Replace tops.
Wrap each sandwich in foil. Bake at 400 for 10-12 minutes or until heated through.
I just eyeball the amounts. My dad altered the recipe by combining the spaghetti sauce and the meatballs in a microwave-safe casserole and adding peppers, onions, and a little brown sugar and then cooking/heating them all together. He places sliced cheese (provolone was excellent!) on the bun followed by pepperoni followed by the meatball sauce mixture. He heats the sandwich the same way as the recipe calls for. I've decided this method tastes better!
P.S. We've discovered that too long in the oven ruins the sandwiches. Stick with 10-12 minutes. :) The leftovers aren't too bad either.

Yummy Pasta Salad!
Yummy Pasta Salad
1 bag of Radiatore pasta (sometimes I can't find this so I use wagon wheel,spiral, or any pasta salad noodles to your liking!)
1 Can of Pineapple Tidbits drained
Red grapes cut in half
1 bunch green onions chopped
3-4 celery chopped
cook pasta according to directions on bag. drain, run under cold water to help cool it off faster and also help it to not stick together. add all of the ingredients together, mix sauce then pour over salad and blend it all together.
Sauce for salad
2 parts KRAFT coleslaw dressing to 1 part mayonaise ( basicly I dump the whole bottle of coleslaw dressing in a bowl and add 1 cup of mayo.) Mix this together and pour over pasta salad and blend till everything is coated well. makes a fairly big bowl of salad.
optional to add:
cooked and chopped chicken
cashews
mandarin oranges

Orange Glazed Rolls
I think there is an actual recipe for these somewhere on the web, but I usually just wing it.
Thaw 8-12 rhodes rolls in your fridge. Once thawed, roll out into a long string, then tie in a knot. In a separate bowl, zest one orange and mix with some sugar. Dip the rolls in melted butter, then into the orange zest/sugar mixture. Place on a greased pan. Bake at 350 for 10 minutes or so.
Frost with this glaze:
1 cup powdered sugar
1 tsp orange juice concentrate
splash of milk

Pork Tenderloin
1 1/2 lbs pork tenderloin, cubed
3/4 cup flour
2 tsp garlic salt
3 TBS butter
3 TBS oil
1 can CONDENSED chicken broth
1 1/2 cups water
1 envelope onion soup mix
rice or mashed potatoes
In a large resealable bag combine flour and garlic salt. Add cubed pork tenderloin. Seal and shake the bag to coat pork. In a large skillet, brown pork in oil and butter. Add broth, water and onion soup mix. Bring to a boil. Cook and stir for about 20 minutes or until pork is thoroughly cooked. Thicken with additional flour and water if needed. Serve over mashed potatoes or rice. Makes 8 servings.

Corn Tortilla Chicken Lasagna
3 cups cubed cooked chicken breast
1 can (28 oz) kidney beans, rinsed and drained
24 oz salsa (usually 1 1/2 jars)
1 1/2 cups sour cream
1 large green pepper, chopped
2 (3.8 oz) sliced ripe olives, drained
1 1/2 cups Montery Jack cheese, shredded
1 1/2 cups cheddar cheese, shredded
Grease 9X13 baking dish. Arrange 6 tortillas. Top with 1 cup chicken, 2/3 cup kidney beans, 1 cup salsa, 1/2 cup sour cream, 1/2 cup green pepper, about 1/3 cup olives, 1/2 cup both cheeses. Repeat layers twice.
Cover and bake at 350 for 25 minutes. Uncover: bake 10-15 minutes longer or until cheese is melted. Let stand 10 minutes before serving. Yield:12 servings.
We top it with pico de gaio or guacamole.

Italian Sausage Hoagies
This is a Dillon Super Bowl Party must have! Easy and delicious.
Ingredients:
10 Italian sausage links (I use the horseshoe smoked sausage in the deli section. Brats work well too)
2 Tbsp olive oil
1 jar meatless spaghetti sauce
1/2 med green pepper - sliced
1/2 med red pepper - sliced
1 small yellow onion - sliced
1/2 cup water
1/4 cup parmesan or romano cheese
2 Tbsp dried oregano
hoagie buns
In large skillet, brown sausage. Drain. Transfer to slow cooker. Add spaghetti sauce, peppers, onions, water, cheese and oregano. Cover and cook on low for 4 hours. Top with grated cheese if desired.
Suggested beverage: Diet Coke

Chicken Pot Pie
Prep Time: 20 Minutes Cook Time: 50 Min. Ready In: 1 Hr. 10 Min. Yields: 8 servings
I got this recipe from http://www.allrecipes.com/ . I made a few adjustments that I added in red. It's really not as "hard" or as labor intensive as it seems- I promise! And it beats those frozen pot pies- hands down! Enjoy!
INGREDIENTS:
1 pound skinless, boneless chicken breast halves - cubed (I used 3 breasts)
1 cup sliced carrots
1 cup frozen green peas
1/2 cup sliced celery
1/3 cup butter
1/3 cup chopped onion
1/3 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon celery seed
1 3/4 cups chicken broth
2/3 cup milk
2 (9 inch) unbaked pie crusts (in the freezer section)
DIRECTIONS:
1. Preheat oven to 375 degrees
2. In a saucepan, combine chicken, carrots, peas, and celery. Add water to cover and boil for 15 minutes. Remove from heat, drain and set aside. (For my version, I put a scant amount of olive oil in a pot. Once it was heated through, I added the chicken and tossed it until no longer pink. Then I added the carrots, peas, and celery and poured 2 cans of broth over instead of water- for more flavor...)
3. In the saucepan over medium heat, cook onions in butter until soft and translucent. Stir in flour, salt, pepper, and celery seed. (I didn't have celery seed- so I omitted it- it was still good!) Slowly stir in chicken broth and milk. Simmer over medium-low heat until thick. Remove from heat and set aside.
4. Place the chicken mixture in bottom pie crust. Pour hot liquid mixture over. Cover with top crust, seal edges, and cut away excess dough. Make several small slits in the top to allow steam to escape. (I really felt like there was enough filling to make 2 less-full pies. I didn't use all of the filling or the liquid because it started to overflow... so maybe try making 2 pies and freeze one or give it to a neighbor!)
5. Bake in the preheated oven for 35 to 45 minutes, or until pastry is golden brown and filling is bubbly. Cool for 10 minutes before serving.

Cream Cheese Chicken Enchiladas
This recipe is one of my kids favorites and it is so fast and easy! I even sometimes use canned chicken if I am really in a pinch for time and it still tastes great!
Ingredients:
3-4 chicken breasts, diced
1 8 oz. pkg. of cream cheese (I use light cream cheese and it still tastes great!)
3/4 c. sour cream
1 can mild green chiles
1/2 cup salsa
1 14 oz. can enchilada sauce
1 cup grated cheese
chopped olives (optional)
6-8 medium flour tortillas
Put diced chicken in skillet and cook thoroughly. Meanwhile, combine cream cheese, sour cream, green chiles, and salsa in mixing bowl. Add cooked chicken and stir. Put a large scoop of filling into each tortilla and roll it up. Place in a large baking dish. Pour enchilada sauce over tortillas. Top with cheese and olives. Bake for 25-30 minutes at 350 degrees. Enjoy!

Snickerdoodles
1 cup butter shortening
2 eggs
1 1/2 cups sugar
3 cups flour
1 tsp baking soda
2 tsp cream of tartar
1 tsp salt
1. Preheat oven to 350 degrees.
2. Cream shortening, eggs, and sugar.
3. Mix dry ingredients in separate bowl, and add to other mixture.
4. Mix together a few tablespoons of sugar, to a few teaspoons of cinnamon. Roll dough into balls, and roll in cinnamon and sugar mixture.
5. Bake at 350 for 8-10 minutes.

Peanut Butter Oatmeal Cookies
1/2 cup shortening
1/2 cup margarine
1 cup brown sugar
3/4 cup white sugar
1 cup peanut butter
2 eggs
1 1/2 cups flour
2 tsp baking soda
1 tsp salt
1 cup oats
2 cups chocolate chips
1. Preheat oven to 375 degrees.
2. Cream shortening, margarine, and white and brown sugars until smooth. Add peanut butter, and mix well. Add eggs one at a time, mixing well after each.
3. In a separate bowl, combine flour, baking soda and salt. Mix.
4. Add dry mixture to wet mixture, and mix well. Stir in oats. Add chocolate chips, and mix.
5. Bake for 9-11 minutes. Let cookies sit on the cookie sheet for two minutes after you take them out of the oven, before putting them onto a rack.

Pumpkin Dessert
1 can (15oz) pumpkin puree
1 can (12 fl.oz) evaporated milk
3 eggs
1 cup white sugar
4 tsp pumpkin pie spice
1 package (18.25 oz) yellow OR spice cake mix
3/4 cup butter, melted
1 1/2 cup chopped walnuts
1. Preheat oven to 350 degrees. Grease a 9x13 baking dish.
2. In a large bowl, combine pumpkin, milk, eggs, sugar, and spice. mix well, and pour into the 9x13 pan.
3. Sprinkle dry cake mix over the top, then drizzle with melted butter. Top with walnuts.
4. Bake at 350 degrees for one our, or until a knife inserted into the center comes out clean.

Zucchini Bread
3 cups flour
1 tsp salt
1 tsp baking soda
1 tsp baking powder
4 tsp ground cinnamon
1 tsp nutmeg
3 eggs
1/2 cup oil
1/2 cup applesauce
1 cup brown sugar
1 cup white sugar
4 tsp vanilla
3 1/2 cups grated zucchini
1 cup chopped walnuts (optional)
Crumb topping (to be sprinkled on after 15 minutes of baking):
1/2 cup quick oats
1/2 cup brown sugar
1/4 cup flour
1/2 tsp cinnamon
1/4 cup butter
1. Grease two 8x4 inch pans. Preheat oven to 325 degrees.
2. Sift flour, salt, baking powder, baking soda, cinnamon, and nutmeg together in a bowl.
3. Beat eggs, oil, applesauce, vanilla, and sugar together in a large bowl. Add sifted ingredients to the creamed mixture, and beat well. Stir in zucchini and nuts until well combined. Pour into prepared pans.
4. After 15 minutes of baking, add the crumb topping to the top of each loaf. Continue baking for another 40-45 minutes, or until toothpick inserted into the center comes out clean. Cool in pan on rack for 20 minutes.

Apple Bread
1/4 cup butter, softened
1 cup white sugar
1 cup chunky applesauce
2 tsp ground cinnamon
2 packets instant apple cinnamon oatmeal
2 eggs
1 tsp baking soda
1 1/2 cups flour
1/2 cup Granny Smith apple, cut into small pieces
1. Preheat oven to 350 degrees. Lightly grease 9x5 loaf pan. Mix together some extra cinnamon and sugar (besides what is called for in the recipes--just a tsp or so of each), and sprinkle it on the sides and the bottom of the pan.
3. Cream together the butter and sugar until light and fluffy. Mix in applesauce, cinnamon, and one and a half packets of oatmeal. Stir in the eggs one at a time, beating well with each addition. Mix in the baking soda and flour. Add the apples.
4. Pour batter into prepared pan and sprinkle with remaining oatmeal.
5. Bake in preheated oven for 60 minutes, or until a toothpick inserted into the center comes out clean.

Chocolate Chip Cookies
I know everyone already has their favorite chocolate chip cookie recipe . . . but these are really good!! My sister had them at my Mom's when we were last there and after I'd eaten like a dozen of them in 10 minutes she says to me "don't worry about the pound of butter that's in the cookies". Thanks Erica!! (No picture today, but I'll work on that.)
1 lb. butter (softened)
1 1/2 cups white sugar
2 cups packed brown sugar
3 eggs
2 tsp vanilla
6 cups flour
1 1/2 tsp baking soda
1 1/2 tsp salt - use exact amount
4 cups chocolate chips - 2 bags
Cream butter. Combine sugars then add to butter. Mix eggs and vanilla in small bowl and add to sugar mixture. Mix dry ingredients then add slowly. Add chocolate chips. Line cookie sheets with wax paper. Cook @ 350 for 8 - 10 minutes. Cool on wax paper. Only let cool for 1 minute on pan.

Fast & Easy homemade pizza
I love this recipe because it is so easy to make and only takes about 10 minutes of prep time. This is for the dough so you can make any kind you would like, but we really like the BLT pizza. (I don't have a picture, sorry!)
2 cups flour
1 Tbsp. Yeast
1 Tbsp. sugar
1/2 tsp. salt
1 Cup "comfy hot" water
2 Tbsp. oil
another 1 cup flour as needed
Mix flour, yeast, sugar, & salt. Then add water, oil (and extra flour as needed). Makes a soft dough but not sticky. Knead for 5 minutes, then let the dough rest 5 minutes. Roll onto pizza stone or baking sheet. Cook for 2-3 minutes at 500 degrees to set the dough. Then take out and add toppings. Cook another 8-10 minutes or until golden brown. You can make 2 thin crusts with this recipe. It is yummy and soft.
To do the BLT toppings: I add chopped up bacon and cheese on regular pizza sauce. Cook as directed. In a bowl put chopped lettuce with a little mayo, add to top of fresh baked pizza and add a slice of tomato. It is delicious!!!
