Grilled Veggie Wraps

Good to eat and good for you!

2 teaspoons Olive oil
1/2 c. chopped white onion
1/2 c. shredded carrots
1/2 c. chopped red or green pepper (I like red best)
1 1/2 c. chopped zucchini
1 c. spinach
1 1/2 c. chopped yellow squash

Heat oil in a skillet over medium heat. Add onions, carrots, and bell pepper. Cook for about 3 minutes. Stir in squash and zucchini and cook for another 3 minutes. Add spinach and season with black pepper. Remove from heat and allow to cool before assembling the wraps.
Spread a nice layer of cream cheese over the entire tortilla. Add the vegetables and roll tight. Cut each wrap in half.
Each wrap has about 200 calories and provides a whole serving of vegetables. Plus all those great vitamins and minerals we need.

Creamy Chicken Soft Tacos

This one is EASY and sooo good.

4 frozen boneless, skinless chicken breast
1 (16oz.) jar of salsa
1 cup sour cream
6-8 flour tortillas

Place chicken breasts in crock pot. Pour salsa over the top and let it cook (approx. 8 hours on low). One hour before serving, add sour cream and stir. Before serving, shred chicken with fork. Serve on tortillas with cheese, lettuce, tomatoes, or whatever sounds good.

Cream Cheese Chicken

2-4 frozen chicken breasts
1 package Italian dressing mix
2 cans cream of chicken soup
8 oz cream cheese -- not frozen

Put first 3 ingredients together in a crock pot for 6-8 hours on low. Pull out chicken (carefully because it has a tendency to fall apart) and mix in cream cheese. Thin sauce with water or milk to desired consistency and stir well. Serve over noodles - I like bow tie.

**You can leave the chicken in the crock pot when you mix in the cream cheese. The chicken will break apart and then you can serve all of it over the noodles. However, this looks less appetizing (though it tastes the same), and I prefer not to do it.

Taco Soup

1 lb ground beef
1 small onion diced -- I just use onion salt, or dried onion.
1 can kidney beans (or black beans) -- or both
1 can chili beans
1 can white corn -- yellow corn works too
1 can green chilies
1 can Mexican stewed tomatoes
½ pack taco seasoning
Fritos -- scoops are the best
Cheese-grated
Sour Cream

Brown beef & onions, when cooked, add beans, corn, chilies, tomatoes & seasoning. Simmer until desired consistency. Put Fritos in each bowl, and then pour beef mixture over Fritos. Top with cheese and sour cream. -- I prefer to dip my Fritos or put them ontop of the soup rather than the bottom.

**While the hamburger is browning, I generally throw everying into a pot to let it get started cooking. Once the hamburger is browned and mixed in, you should be ready to eat. However, the longer it simmers, the better it is.
**The recipe technically says to drain everything but the chili beans, but I never do. I like to have it a little more "soupy." However, it is totally my personal preference.

Kahlua Pork

This recipe is delicious if you are a pork fan! And it is very easy. We love to throw it together on Sunday morning and let it cook all day. It makes the house smell soooo good! Hope you enjoy it.

1 large pork shoulder or rump (3-4 pounds)

Mix the following ingredients:
1 T. sea salt
1 t. worchestershire sauce
1/4 c. soy sauce
2 T. powdered ginger
2 t. crushed garlic
1 T. liquid smoke (yes,it is called liquid smoke..most grocery stores have this)
A splash of teriyaki sauce

Marinate pork for 1 hour. (Cut the pork first into smaller chunks...they don't have to be real small just smaller) Place meat into crock pot with juice mixture. Cook on low for 8-10 hours or high for 4-5 hours.. Shred the pork and serve over rice.

Easy Cheesy Chicken Bake

Okay, so I've totally been into casseroles lately. They're just easy and the kids seem to really like them. Plus, it kind of hides the veggies which makes them more likely to eat them. This is one of our favorites!

1 pkg. Stove Top stuffing mix for chicken
3-4 boneless skinless chicken breasts cubed and cooked
1 bag frozen broccoli florets, thawed and drained (I've also done them frozen and it turned out fine.)
1 can cream of chicken soup
1/2 cup milk
1&1/2 cups shredded cheddar cheese

1. Preheat oven to 400 degrees.
2. Cook chicken and set aside.
3. Prepare stuffing mix.
4. Mix chicken and broccoli in baking dish. Stir in soup, milk and cheese, top with prepared stuffing.
5. Bake 30 min. or until heated through.

Let's Revive our Abandoned Blog!

It seems we’ve all deserted our poor recipe blog!

Well I have a proposition for you! As one of my new year’s resolutions, I am trying to cook better for my family (more regularly and healthier). But, it is only mid-January and I’m just not feelin’ my recipes. :) Can you help?

Let’s resuscitate our recipe blog! As a shabby attempt to motivate us, I propose a contest. Any one who posts a recipe between now and Valentine’s Day will be entered into a drawing for an extremely exciting prize: probably a $10 Target gift card or something similar (hey, I’m not made of money!). Post your yummy holiday recipes, your winter comfort food recipes, your Super Bowl recipes; post it all! Don’t worry about including a picture if that discourages you from posting.

Because I got a great new crock pot for Christmas and it seems my afternoon-make-dinner-hours are crazy, I will enter you twice if you post a crock pot recipe! (My contest, my rules! He he!)

As always, if others want to join, just leave a comment with your email.

Happy Cooking! And thanks in advance! I’ve had great luck with your recipes in the past!
