Yummy Onion Rings

We were in the mood for some nice fried onion rings and I found this recipe on allrecipes.com. It is delicious and can feed a family of four easily. We only ate half the batch and I used one onion. The recipe says it takes about 20 minutes, but it took me about 45, and it was well worth it. When they were done frying, I put them on a cookie sheet lined with paper towels and set them in the oven at 200 degrees to stay warm. Also, we don't have a deep fryer, so I just filled a frying pan with oil and it worked great! That is also why it took a little longer. (the picture doesn't do it justice because we already ate half the batch!)


INGREDIENTS:
1 large onion, cut into 1/4 inch slices
1 1/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon salt
1 egg
1 cup milk, or as needed
3/4 cup dry bread crumbs
seasoned salt to taste
1 quart oil for frying, or as needed
DIRECTIONS:
1.Heat the oil in a deep-fryer to 365 degrees F (185 degrees C).
2.Separate the onion slices into rings, and set aside. In a small bowl, stir together the flour, baking powder and salt.
3.Dip the onion slices into the flour mixture until they are all coated; set aside. Whisk the egg and milk into the flour mixture using a fork. Dip the floured rings into the batter to coat, then place on a wire rack to drain until the batter stops dripping. The wire rack may be placed over a sheet of aluminum foil for easier clean up. Spread the bread crumbs out on a plate or shallow dish. Place rings one at a time into the crumbs, and scoop the crumbs up over the ring to coat. Give it a hard tap as you remove it from the crumbs. The coating should cling very well. Repeat with remaining rings.
4.Deep fry the rings a few at a time for 2 to 3 minutes, or until golden brown. Remove to paper towels to drain. Season with seasoning salt, and serve.

you left me a message on my blog and this is the only way i knew to tell you thank you.
of course it is okay that you read and commented on my blog. i am actually so grateful every time i see that someone else has shared their thoughts and their love with me. when people take the time to do that, it brings me comfort and strength to know that someone else knows a little piece of what i lost when aaron passed away.
i am so sorry about your son. i haven't lost a child. i have lost my brother and now my husband. i have learned that each relationship is a different experience and mourning process. they are all so painful. losing aaron is a devastation that i never dreamed i would have to go through. it is so difficult... every day is a struggle to get out of bed. but... i have my son and i do it for him.
i miss aaron so much. my soul mate... my partner... my other half... is gone.
i am grateful for the knowledge we have though. if i didn't know i would see him again, i don't know how life would be now.
anyhow, i wanted to say thank you and that i am grateful.
